WORKSHOP: FIRST ENCOUNTER WITH WINE
Radionica: Prvi susret s vinom

From the first moment I stepped into Velvet café in Zagreb and scented the champagne Jelena was pouring to welcome us, I felt as though I had just entered the home of a good friend. With her warm smile and inviting energy, it’s no doubt that anyone who enjoys wine and values the fact that it is indeed a worldwide phenomenon, will only be further attracted to it at her little school of wine.

Od prvog trena kada sam ušla u Velvet café u Zagrebu i osjetila pjenušac koji nam je Jelena servirala za dobrodošlicu, osjećala sam se kao da sam ušla u dom svoje bliske prijateljice. Svojim toplim osmijehom i energijom kojom poziva na uživanje, nema sumnje da će svi koji cijene vino i samu činjenicu da je ono živući, svjetski fenomen biti samo još više njemu privučeni kroz malenu vinsku školu.

 

Marija: How and when was your love for wine born?

Jelena: My love for wine began eleven years ago, when I oriented my life towards gastronomy while working in excellent restaurants in Zagreb where I came across wine every single day. This love was born very spontaneously and naturally, and so in 2006 I decided to enroll into my first sommelier course.

Marija: Kako i kada Vam se rodila ljubav prema vinu?

Jelena: Ljubav prema vinu se rodila prije jedanaest godina,  kada sam svoj životni put usmjerila ka gastronomiji radeći u vrhunskim zagrebačkim restoranima gdje sam se svakodnevno susretala sa vinom. Sasvim prirodno i spontano se rodila, te sam 2006. godine odlučila upisati svoj prvi sommelierski tečaj vina.

Marija: Can you tell us about your path with wine until today?

Jelena: Excellent question. My affection towards wine started when I tasted the renowned Italian Brunello di Montalcino Castelgiocondo which my boss, Boris Gregorić, had opened after an amazing day at the restaurant. Since that day until now, I have tasted truly great wines, and the part that excites me most is every new bottle I open to share with my husband and friends. For the past nine years I have been working as a sommelier in restaurants where I have been enjoying food and wine, exploring and discovering “the perfect match”. My biggest inspiration have been guests which have always believed in me and my work and follow me even to this day. My journey with wine is an everlasting one, therefor it’s difficult to describe it in short. I feel as though wine chose me, not the other way around.  

Marija: Možete li nam ispričati ukratko svoj put s vinom do danas?

Jelena: Sjajno pitanje. Ljubav prema vinu se rodila prvi put kada sam kušala slavni talijanski Brunello di Montalcino Castelgiocondo koji je moj tadašnji šef Boris Gregorić  otvorio nakon odlično odrađenog radnog dana u restoranu. Od tada do danas kušala sam sjajna vina i ono što me uvijek iznova oduševljava je svaka nova otvorena butelja koju mogu podjeliti sa suprugom i prijateljima. Zadnjih devet godina radila sam kao sommelier u restoranima gdje sam najviše uživala u hrani i vinu te pronalazila i otkrivala “perfect match”. Moje najveće nadahnuće bili su gosti koji su uvijek vjerovali u mene i moj rad i koji me i dan danas prate. Moj put s vinom je vječan i teško ga je opisati ukratko jer čini mi se da je vino mene izabralo, a ne ja njega.

Marija: How did the concept of your wine school begin? What were your expectations, what has the response been like?

Jelena: The concept of my school of wine consists of three programs which form one whole: “First Encounter with Wine”, “Wine Roads of the World”, and “Food & Wine”. Through these three workshops we learn about the basics of wine: how to taste it by organoleptic analysis, how to correctly open and pour it, we learn about aromas and different styles of wine. We get to know the best types of wine from all over the world. We also try to discover corresponding foods through sensory analysis, with the goal of matching it with the perfect wine.
The response to my workshops has been great, and I am too happy with the course that it has taken. We’re always booked, and there’s definitely a special energy radiating through each class.

Marija: Kako je započet koncept Vaše vinske škole? Kakva su vam bila očekivanja, a kakav je odaziv?

Jelena: Koncept vinske škole sadrži tri programa koja čine jednu cjelinu. “Prvi susret s vinom”, “Vinskim putevima svijeta, te “Hrana i vino”. Kroz tri druženja polaznici uče o osnovama vina, kako ga degustirati kroz organoleptičku analizu, kako pravilno otvoriti vino i dekantirati ga. Učimo o aromama u vinu koje i vježbamo te upoznajemo različite vinske stilove. Upoznajemo se sa najpoznatijim vinima svijeta. Pronalazimo savršen spoj između hrane i vina uz pomoć osjetilne analize hrane s ciljem usklađivanja s vinom. Odaziv na Vinsku školu je sjajan i presretna sam kojim putem idemo. Vinska škola je uvijek puna i zrači posebnom energijom.

Marija: What are your plans for the future? Can we expect your workshops in other cities (of Croatia)?

Jelena: Pupitres Boutique of Wine Culture is the name of the company that my partner Ognjenka Manojlović and I recently founded, so we are only at the beginning with the implementation of our services. We’re working on some lovely surprises, I can let you in on one for now. Next summer, we begin a tour with our school of wine all the way down the Adriatic coast, to enchant all of Croatia with our love for wine!

Marija: Kakvi su Vam planovi za budućnost? Možemo li očekivati radionice i u drugim gradovima Hrvatske?

Jelena: Pupitres, boutique vinske kulture je firma koju sam nedavno osnovala sa svojom partnericom Ognjenkom Manojlović i koja tek kreće sa implementacijom svojih usluga. Pripremo sjajna iznenađenja, pa ću vam otkriti jedno od njih. Na ljeto krećemo sa Vinskom školom po Jadranskoj obali kako bismo zarazili cijelu Lijepu našu ljubavlju prema vinu.

Marija: In your opinion, what is the most important message you would like to communicate through your work?

Jelena: The most important message is to spread love towards wine through the experience and knowledge I have been building for years. Also, as I always say, my wish is to captivate my pupils with all of my passion, and perhaps set off a spark of love towards wine in them, too.
At the same time, very important things are happening here. We’re restarting the culture of sitting down and dining together. The wine community is strengthening, the participants who come to my workshops are getting to know each other and connect.
Through this chain reaction, we’re creating a mini wine revolution. 

Marija: Prema Vašem mišljenju, koja je najvažnija poruka koju želite ispričati ovom radionicom?

Jelena: Najvažnija poruka je širiti ljubav prema vinu kroz iskustvo i znanje koje sam godinama stjecala i gradila. I, kako ja kažem, zaraziti polaznike svim svojim žarom i pobuditi u njima ljubav prema vinu. Uz to paralelno događaju se i jako važne stvari. Kultura stola se produbljuje, vinska zajednica učvršćuje, polaznici se međusobno povezuju i  upoznavaju, te kao lančanom reakcijom svi zajedno kreiramo malu vinsku revoluciju.
